I’ve never really considered myself to have much of a sweet tooth. I’m ALL about the pizza as you probably already know. So when my tastebuds are hankering a little dessert, I make sure it’s done right – and these chocolate and banana muffins really hit the sweet spot.
INGREDIENTS – makes 12 muffins
3 ripe bananas (the squishier the better)
125ml vegetable oil
2 large free range eggs
A drop of vanilla extract
100g soft brown sugar
225g plain flour
3 tbl spoons cocoa powder (sifted)
1 tsp of baking powder
a handful of chocolate chunks (I used dark chocolate)
Start by pre-heating your oven to 200°C. Then get your muffin tray prepared and ready for your mixture.
Then mix all your wet ingredients together – the eggs, oil and bananas.
Then add your sugar to the wet mixture.
Once that’s all nicely mixed together, measure out your dry ingredients – the flour, cocoa powder and baking soda.
Now mix your wet and dry together.
And add the chocolate chunks of your choosing – you can even chuck a few nuts in there if you’re so inclined.
Spoon the completed mixture into your muffin cases – I filled them about halfway full.
Once they’re all sitting pretty, pop them in the preheated oven for 15 minutes.
When they come out they’ll be moist, soft and delicious, you are encouraged to consume immediately but the banana will keep these beauties scrummy for days – someone put the kettle on!
